When I worked in a restaurant abuot 12-13 years ago, I remember the bartenders talking about asking bar customers who were paying with credit cards to sign a blank credit card receipt before being served. Not sure if it had to do with potential walk-outs or being drunk, though.
Then again, doesn't the club have some sort of liability for letting the guy get so drunk he can't remember signing his own name? Had he driven, they could have been charged, correct?

The bar could not be charged in a criminal case, but they very likely would have some civil liability if the drunk caused an accident that injured or killed someone.
