Comment: A friend said she and her husband saw, at a Chinese market in San Francisco, chickens that were hanging for sale that had blue skin, beak, legs, etc. She was unable to communicate to the vendor her question as to WHY and HOW the chickens were blue -- ever heard of blue chicken before??

Yup - they are usually referred to as "black" chickens. Has to do with the breeding and the feed they are given. The French also have a prized Red, White Blue chicken, which displays the "blue" skin and darker meat. In terms of flavor, it is pretty much like a normal chicken... just a bit meatier, esp the "traditional"dark meat. Here is the traditional blue footed chicken of Bresse.
