I'm glad this thread got started. A few years ago, a Mexican family moved into town and started up a restaurant (they've since expanded that one into a chain). The food is always excellent, but the menu confused the heck out of me because the only place I had ever had tostadas or chalupas at was Taco Bell - and they certainly aren't the same things. Luckily the guys running the restaurant put descriptions next to each item on the menu, but it made me wonder why Taco Bell used existing names of Mexican food items instead of coming up with something less-confusing.
Also, while it isn't nearly as good as the real Mexican place, I love my Taco Bell. I just want to know why "tostadas" were taken off the menu here - accurate name or not, I loved those things, especially for 79 cents.

Hey, Astra, those were my favorite Taco Bell items too. (yes, Taco Bell is...what it is, but even semi Mexican food is better than the alternative sometimes!) I found that some individual stores still carry them. I think they were not as big a seller as some items and they have to make room for their new, sexy, burrito- in a taco -on top of an enchilada - inside a tortilla - inside another tortilla - wrapped up inside a pizza - on top of a hunk of cheese - topped with whipped cream, cherries and nuts - type items.

You know what's really heavenly? Grilled chicken, grilled onions, a little bit of refried beans, cheese and sour cream wrapped in a warm corn torilla. Something about the taste combination of the chicken, onions, and corn really does it for me.

Thanks for that! Here I am sitting at work, hungry as heck and now I am craving tres leche cake! It is every bit as good as you say and I haven't had any in a couple months.

I put peanut butter on flour tortillas, put them in a frying pan to 'toast' them (and melt the peanut butter), then add jam, and roll them up like a burrito. It's my favorite breakfast.

OK, I don't post alot, but I just had to jump in on this. My husband is mexican, and this is how I make his enchiladas (after reading this, you will see why I don't do it very often)
1. boil chilie ancho peppers until soft. 2. puree seeded anco peppers in a blender/food processor 3. press chili paste through a fine mesh striner to remove skin/seeds. 4. simmer chili paste with some reserve water from boiling the peppers 5. Heat oil in a pan 6. dip the corn tortillas in hot oil, and then in chili sauce 7. Fill with desired fillings (in our house it is usually sauteed potatoes & onions) 8. Roll & Serve
This has ended up in many burned fingers, and swearing from me!

To expand on snapdragonfly's post, corn tortillas are made with either fresh masa or masa harina.
Masa is a dough that's made from corn that has been boiled in lime juice and ground. It makes the best corn tortillas, but goes bad relatively quickly. Masa harina is either dried, powdered masa or ground hominy.
Flour tortillas, on the other hand, are made from regular old flour.
So yes, at a very basic level, it's corn flour vs. wheat flour, but in practice, it's somewhat more complicated than that.
